Irani Gosht (mutton) Ingredients- 1. Onion.......4 medium (chopped). 2.Dates........8-10 soaked in water. 3. Green chilli.......5. 4. Coriander leaves.........1 table sp. 5. Curd(sour).........1/2 cup. 6. Water melon seeds..........1 table sp(soaked in water). 7. Red chilli powder.........2 tsp. 8. Garam masala paste...........2 tsp. 9. Ginger & garlic paste.........3 tsp. 10. Coriander powder............3 tsp. 11. Lemon juice of.........1/2 lemon. 12. Salt to taste. 13. Green cardamom powder..........1 tsp. 14. Turmeric powder............1/2 tsp. 15. Mutton........1/2 k.g. 16. Tomato........... 2 large cut. 17. 1 bay leaf, 1 cinnamon stick, 1/4 caray way seeds, 1 chabeelas, 1 pattar phool, 1 large cardamom, 10-15 black pepper . 18. Oil according to requerem. Method- 1. Take mutton in a bowl add curd to it, add salt, ginger and garlic paste mix well, add turmeric powder coriander powder lemon juice and red chilli powder keep it for 1 hour (marination). 2. Take a cooker, add oil in the cooker, put bay leaf, green cardamom, large cardamom, caraway seeds , black pepper and fry them add oinon and fry till they become pink. 3. Add the mutton which we have marinated give a good mix. 4. Cook for 5-6 min , add tomatoes to the mutton cook for 5-6 min. 5. Add garam masala and cook for 3-4 min, Now add paste of green chilli, coriander leaves, dates and water melon seeds. 6. Mix well add water according to requirement. Cook for 20-25 or till the mutton is done. 7. You'll need about 250 to 300 ml of water. 8. Bhakarwadi is a traditional spicy maharastrian snack recipe which requires effort but can be stored for weeks and enjoyed with evening tea. The flour based round discs are stuffed with roasted poppy seeds, steamed and then finally deep fried to a crispy finish. Basen (chick pea flour) 2 cups Whole wheat flour 1 cup Hing pinch Turmeric pinch Salt 1 ½ tb Cumin seeds 1 ts Pepper corns ½ ts Sesame seeds 1 ts Coriander seeds 1 ts Fennel seeds 1 ts Poppy seeds 1 ts Sugar ½ ts Coconut 1 ts Amchur powder ½ ts Oil for deep fry Take a bowl add basen flour, wheat flour, oil, hing, turmeric, salt, chilly powder; crumble the mixture before adding water. Take basen mixture add water mix it like a stiff dough, rest it for 10 minutes. Take blender, in this add fennel seeds, cumin seeds, pepper corns, coriander seeds, sesame seeds, poppy seeds, sugar, hing, chilly powder, coconut, blend all together make a coarse powder, this powder take it into a bowl add salt, amchur powder, add some basen mixture, mix it well. And that is where Kim K-WEST comes in, as Ellen nominated her, and of course, she accepted. Check it out.
